Tonight I will try and attempt this yummy dish…It looks easy, but anything can happen!
Vegan Pad Thai
In a large pot, boil the lo mein noodles according to the package directions. In the last five minutes, add the broccoli. Drain and set aside.
In a small bowl, combine the lime juice, soy sauce, and brown sugar. In a large skillet, heat olive oil over medium heat. Add garlic and cook for 30 seconds. Next, add the noodles/broccoli and soy sauce mixture. Toss until the noodles are well coated with the sauce. Remove from heat and stir in the green onions.
Garnish with cilantro and peanuts

Pizza Sauce Soup (yes it really said that!)
(serves 2)
- 1 can chopped tomatoes
- 1/2 - 1 fennel bulb
- 1-2 cloves garlic
- 1tbsp olive oil
- 1tbsp Thyme
- 1tbsp oregano
- salt and pepper
Put the oil, garlic and fennel in a pan and cook until the fennel starts to soften. Add the tomatoes and rinse out the tin with cold water adding it to the pan. Add the seasoning. Bring to the boil. Simmer for 30 minutes. Blend until smooth. Serve!
