Vegan Zucchini Pasta!

Very first attempt at this and it turned out amazing. 

Ingredients: 

5 zucchini’s
200g button mushrooms
Small Mediterranean mix (the Coles one is delicious and has eggplant, sundried tomatoes and green olives)
1 clove garlic
1 jar of your favourite tomato based pasta sauce

Method:

So easy. Basically just cut up the zucchini as thin as you can and whack it all in a frypan until cooked. It’s best to add the zucchini once the mushrooms have browned a bit then add the pasta sauce and stir through for a couple minutes before the zucchini becomes too soft. 

If you love pasta but don’t want to devour the calories then this is perfect for you and you won’t feel bad going in for seconds. I may have added a splash of merlot too ;)
